Roasted Cauliflower Recipe


I was a little leery about this Roasted Cauliflower recipe when I found it. Cauliflower was one of those foods that made my stomach turn my entire pregnancy with Griffin. So, I have avoided it like the plaque for over three years now.

I came across this healthy recipe when I was looking to mix it up in the area of side dishes. It is so incredibly easy and amazingly tasty…believe me, I wouldn’t lie about this. You have to give it a try! Added bonus…cauliflower is loaded with fiber leaving your satisfied and feeling full longer!

Serves 4

Ingredients


  • 1 medium head of cauliflower
  • 2 tbsp of olive oil
  • pinch of salt and pepper

Make it


  1. Preheat oven to 450 degrees.
  2. Break apart cauliflower so you have individual florets.
  3. Place in large bowl, drizzle olive oil over florets, add salt and pepper, and shake to coat florets.
  4. Place florets on baking sheet and bake for 30-45 minutes. Shake a couple of times to even out the browning.
