Balsamic Chicken Recipe





This awesome Balsamic Chicken recipe was introduced to me by one of my good friends in Washington. After we had Riley, she dropped it off for us so we wouldn't have to cook...best gift you can give a new mom! Anyways, this is one of those easy recipes that deserves a spot on your weekly menu.

Serves 4

Ingredients


  • 5lb whole chicken
  • 1 Large Vidalia onion, cut into slices
  • 1/4 C Balsamic Vinegar
  • 1/4 C Red cooking wine
  • 2 T. kosher salt (I've sea salt)
  • 1 T. minced or chopped garlic /li>


Make it


  1. Wash and clean chicken and stir together seasonings.
  2. Lift skin of chicken and rub season mixture all over the places you can reach under the skin. (Do not remove the skin though!)
  3. Sprinkle some seasoning inside chicken cavity, and reserve a little for later. Let chicken sit for at least 1 hour. (Sometimes I will season and refrigerate it all day.)
  4. In roasting pan, layer onion in bottom. Put chicken on top of onions, breast down. Pour balsamic and wine over chicken. Sprinkle remaining seasonings on top.
  5. Bake at 350 degrees for 2 hours if chicken is 5 lbs. You will have to adjust cook time if it's bigger or smaller.
  6. Serve chicken with onions and the sauce in the pan on top.

Calories…don’t eat the skin and avoid the dark meat…around 300 calories
