Lean Mean Grilled Vegetables Recipe




This is a super easy healthy grilled vegetables recipe that goes great with steak, chicken or even salmon. Sometimes I'm just sick of cooking in the kitchen, so I put my husband to work on the grill. It has 8 ingredients, but it's way too easy to pass up.

Serves 6

Ingredients

  • 1 lb asparagus, bottoms cut off
  • 1 lb small yellow zucchini, quartered lengthwise
  • 3 tbsp extra virgin olive oil
  • 1 lb fresh cherry tomatoes
  • 2 tbsp each of basil, cilantro and oregano
  • 1/2 tsp white balsamic vinegar
  • sea salt and ground pepper to taste
  • 1/2 cup low fat feta cheese (optional)


Make it
  1. Preheat the grill to high.
  2. Place asparagus, zucchini, and tomatoes in a shallow dish and drizzle with 2 tbsp of olive oil.
  3. Sprinkle with sea salt and pepper. Toss lightly to coat. Using metal tongs place veggies on grill opposite to its ridges so they don't fall through.
  4. Cook for 2 minutes and turn over. Cover and cook for another 2 minutes. Remove and place in large baking dish
  5. Let cool a little and cut zucchini and asparagus into one inch chuncks.
  6. Transfer to a salad bowl and add feta, herbs, balsamic vinegar, and remaining 1 tbsp olive oil. Toss and serve.
