Easy Recipe for Broccoli Salad

I found this recipe for broccoli salad with sweet vinaigrette a couple of years ago in my Biggest Loser Cookbook. I am not usually a big fan of this type of salad, but this one is a keeper!

Serves 4


  • 3/4 cup of orange juice
  • 1/2 cup fat-free plain yogurt
  • 3 tbsp stone ground mustard
  • 4 tsp 100% fruit orange marmalade preserves
  • 6 cups broccoli florets, coarsely chopped
  • 1/2 cup chopped red onion

Make it

  1. In a plastic storage container, whisk together the juice, yogurt, mustard and preserves.
  2. Add the broccoli and onion. Toss to coat.
  3. Cover the container with the lid. Refrigerate for at least 1 hour or up to 1 day before serving
