Parmesan Zucchini Strips Recipe

This awesome Zucchini Strips recipe was submitted by Sarah in North Carolina. They definitely deserve a spot on your weekly menu. My 2 year old loved them...BONUS!

Serves 4


  • 1/3 c. seasoned bread crumbs
  • 1/4 c. nonfat Parmesan cheese topping
  • 4 small zucchini, quartered lengthwise
  • 1/4 c. egg substitute

Make it

  1. Combine bread crumbs and cheese.
  2. Dip zucchini in egg, then dredge through crumb mixture.
  3. Place on greased cookie sheet and bake for 20-25 mins at 450 degrees until golden brown.
